Banana Chocolate Chip Muffin recipe

Some time ago, my six-year-old daughter decided that she no longer liked bananas.

As part of my neverending quest to get fruit and veggies into my child, I made banana muffins tonight. But so that they wouldn’t be completely heinous to her, I chocolated ’em up some. This is adapted from a mocha banana chocolate chip muffin recipe from allrecipes.com.

INGREDIENTS:
1/2 cup butter
1/4 cup applesauce
3/4 cups white sugar
1 egg
3 – 4 ripe bananas
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
(NOTE: I mix half unbleached flour and half whole wheat, and also add in several tablespoons of wheat germ. Wheat germ is very rich in folic acid. My mom added it to EVERYTHING when I was growing up, and I guess it stuck.)
1/4 teaspoon salt
1 teaspoon baking powder (plus a pinch)
1 teaspoon baking soda (plus a pinch)
3/4 cup semisweet chocolate chips

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Combine flour, salt, baking powder and soda in a large bowl.
Blend butter, applesauce, sugar, egg, bananas, and vanilla in food processor for 2 minutes. Add dry ingredients and blend just until they disappear. Add chocolate chips and blend for another 20-30 seconds. It crunches up the chips some.
Spoon mixture into 12-15 paper-lined muffin cups.
Bake for 20-25 minutes. Let cool in cups for a few minutes, then cool on wire racks.

My husband normally hates things cooked with bananas (but likes raw ones, go figure) but he ate two of these. My daugher ate an entire one as instructed and didn’t die, so I guess she liked them all right too. I’ll make these again for sure.

    Ah crap. I’ve only got TWO festy bananas in my fruit bowl that need reinventing. I have never understood how Americans can measure butter in cups. Do you melt it first? Isn’t that just a way to make a whole lot of mess?
    Hmmm. I wonder how I would manage half an egg…

    How American measure butter:

    We just slice off the appropriate amount! 🙂

    As for the rest… well, if they’re big bananas, you could maybe get away with it, but you’d want to add more butter and/or applesauce to make up for the moisture. I put 3 1/2 medium bananas in mine today. Tasty!

    As for the rest… well, if they’re big bananas, you could maybe get away with it, but you’d want to add more butter and/or applesauce to make up for the moisture. I put 3 1/2 medium bananas in mine today. Tasty!

    Weird. We measure by the weight and slice off appropriately.

    Hunh. I just looked up a conversion thing and it says 1/2 C butter = 4oz. 4oz. I can do. And housemate Heidi made a whole load of applesauce a while ago which I never thought we’d see the end of so it looks like I’ll be doing that then.

    My goodness, that made me laugh my butt off. I know what you mean… I have a 5 year old who exists on chicken, mango, and not much else.

    I can relate with the wheat germ. I have a tendency to split the all-purpose flour with a combination of wheat germ, whole-wheat flour, and flaxseed meal. I’m going to make these muffins today, thankyouverymuch. I have a jungle full of blackened bananas that need to be made into something.

    Ha! I use flaxseed meal too – I just happen to be out. It’s amazing what we’ll do to get some nutrition into our kids, isn’t it?
