But so that they wouldn&#8217;t be completely heinous to her, I chocolated &#8217;em up some.  This is adapted from a mocha banana chocolate chip muffin recipe from <a href=\"http:\/\/www.allrecipes.com\">allrecipes.com<\/a>.<\/p>\n<p><!--more Banana Chocolate Chip muffin recipe--><\/p>\n<p>INGREDIENTS:<br \/>\n1\/2 cup butter<br \/>\n1\/4 cup applesauce<br \/>\n3\/4 cups white sugar<br \/>\n1 egg<br \/>\n3 &#8211; 4 ripe bananas<br \/>\n1 teaspoon vanilla extract<br \/>\n2 1\/4 cups all-purpose flour<br \/>\n(NOTE: I mix half unbleached flour and half whole wheat, and also add in several tablespoons of wheat germ.  Wheat germ is very rich in folic acid.  My mom added it to EVERYTHING when I was growing up, and I guess it stuck.)<br \/>\n1\/4 teaspoon salt<br \/>\n1 teaspoon baking powder (plus a pinch)<br \/>\n1 teaspoon baking soda  (plus a pinch)<br \/>\n3\/4 cup semisweet chocolate chips<\/p>\n<p>DIRECTIONS:<br \/>\nPreheat oven to 350 degrees F (175 degrees C).<br \/>\nCombine flour, salt, baking powder and soda in a large bowl.<br \/>\nBlend butter, applesauce, sugar, egg, bananas, and vanilla in food processor for 2 minutes.  Add dry ingredients and blend just until they disappear.  Add chocolate chips and blend for another 20-30 seconds.  It crunches up the chips some.<br \/>\nSpoon mixture into 12-15 paper-lined muffin cups.<br \/>\nBake for 20-25 minutes. Let cool in cups for a few minutes, then cool on wire racks.<\/p>\n<p>My husband normally hates things cooked with bananas (but likes raw ones, go figure) but he ate two of these.  My daugher ate an entire one as instructed and didn&#8217;t die, so I guess she liked them all right too.
